Make Your Own Granola

Just about every weekday, I have a bowl of greek yogurt, fruit, granola and a little honey for breakfast.  Zoey likes it too. 

 Some of the granola that you can buy at the store is #1 expensive and #2 full of unwanted ingredients.
 
Last Christmas, my friend, Merril (AKA my Mom’s boyfriend’s daughter), brought me homemade granola in a mason jar with a cute bow around it.  The next week I had her come over and show me how to make it and I’ve been making my own ever since. I probably mix up a new batch every couple of weeks.  
Here is what you’ll need:
  • 4 cups rolled oats
  • 1 cup wheat germ
  • 1 cup nuts (I used raw pumpkin seeds and sliced almonds)
  • 1 cup dried fruit (I omit this because I put fresh fruit in the yogurt but dried blueberries are a really good choice)
  • 1/2 cup butter (Or apple juice for low fat –  I like to do half butter and half juice)
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon (Other spices such as nutmeg, all spice and cloves can be added)


Combine all dry ingredients except dried fruit in a bowl. 

Heat oil, honey vanilla and the cinnamon in a saucepan until the mixture thins. 

Sprinkle heated wet ingredients over dry mixture and mix until everything is lightly coated.

Pour onto a baking sheet/jelly roll pan.

Bake at 350 degrees until everything is toasted to your desire.  I put the timer on for 8 minutes & stir, then another 8 minutes & stir, and then about 5-6 minutes longer and take it out.  My oven cooks things faster though.  The granola will be a little toasty.  

Add dried fruit once granola has cooled.

This makes a large Ziploc container full.  I use about a fourth of a cup on my yogurt each morning.  Just FYI – a cup of 0% greek yogurt, fresh fruit, granola and a tablespoon of honey is about 320 calories.  I’m full for the whole morning.
