My husband isn’t a big fan of cake, so when it comes time to celebrate his birthday (like we did over the weekend!), my boys and I always make him a giant chocolate chip cookie sundae instead. This recipe is really quick and easy, and it’s always a crowd favorite. It’s definitely a diet buster though, so this one is probably best saved for holidays and special occasions (like Tuesdays)
- 2 1/2 cups all purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 cup butter, softened
- 1/3 cup white sugar
- 3/4 cup brown sugar
- 1 (3.5 ounce) package of Jello instant vanilla pudding mix
- 2 eggs
- 2 tsp. vanilla extract
- 12 oz. chocolate chips
Preheat oven to 325 and lightly grease a 10″ cast iron pan with a small amount of butter.
Cream together the butter and the sugars. Add in eggs, lightly beating after each one. Stir in vanilla.
In a separate bowl, combine flour, baking soda, salt and vanilla pudding. Add the dry ingredients to the wet ingredients and mix well. Stir in chocolate chips.
Smooth cookie dough mixture into the cast iron pan. Bake for 25-30 minutes or until top is lightly golden. Serve warm with vanilla ice cream on top (and hot fudge…and caramel…and nuts…and whipped cream…).
