I love a dinner that only takes minutes to prepare! Here’s my quick and easy recipe for making yummy teriyaki beef stir-fry and rice.
What you’ll need:
- Beef sliced for stir-fry or fajitas
- Teriyaki marinade (here is my fave)
- 1 large red pepper (or any other veggies you’d like to include)
- 1 box of white minute rice
- Small sauce pan with lid
- Frying pan
Start by marinating your beef. The one I like is a 30-minute marinade so it doesn’t take long. As your meat is marinating, pre-chop all of your veggies– for this time around, I only used red pepper but you can add in broccoli, carrots, etc.
Then prepare your rice by following the instructions on the box. I boil one cup of water, add in one cup of rice, remove pan from heat and cover for 5-6 minutes.
As your rice is sitting covered, throw your veggies and stir-fry into a large frying pan. Simmer on med-hi heat until your meat is thoroughly cooked.
Next, plate your rice then add your veggies and beef on top. Be sure to drizzle some of the leftover, simmered teriyaki sauce over your meal.
