Have you heard of starter bread (a.k.a. friendship bread) before? I have, but never had the opportunity to have one of my own … that is until my mother-in-law said she was looking for one and found out our friend Mariah has had one for a long time. So, I have a starter in my fridge now that I love and nurture each week.
If you don’t have a starter, you can make one or even buy one for that matter. Check out the ‘how to’ here from Bread Cetera. They just get better and better with time so that’s why it’s nice to “borrow” from someone else.
Mariah gave us a few great recipes, and this sourdough pancake recipe was super tasty. I added the strawberries (because I add them to pretty much anything I can). They actually kind of taste like buttermilks with that same slight tang.
Here is what you need:
1/2 cup sourdough starter
2 cups flour
2 cups lukewarm water
2 Tbs sugar
1 tsp salt
1/2 tsp baking powder
3 Tbs canola or vegetable oil
1/2 tsp baking soda
1 Tbs water
Basket of washed strawberries, sliced
Take out 1/2 cup of the sourdough starter and pour into a large bowl. Add the flour and water and wisk until smooth.
Tip: for thicker pancakes you can let these mixed ingredients sit on the counter overnight, I made them right away and they were more like crepes.
When you are ready, add the sugar, salt, baking powder and oil to the batter. Then beat in the 2 eggs.
Heat the water in the microwave for 30 seconds and dissolve the baking soda in it. Fold in.
Heat a skillet and butter it so the cakes won’t stick.
Pancakes are ready to flip when they start to bubble. I like when they get a teeny bit of crust from the butter around the edges.
Makes about 6 servings.
Zoey loved them – she is two years old and actually said the word “delicious”! I’m pretty sure my sister taught her how to say that – and wow was it cute.
